Mama Mia’s 3-Layer Lasagna

In a 9 x 12 inch glass or stainless steel lasagna pan, make 3 layers in the following order:

~ Slightly cooked Lasagna Noodles – soft and pliable, but not mushy

~ Slightly steamed fresh or frozen organic Kale or Spinach (optional)

~ Mama Mia’s Pasta Sauce (click HERE for the recipe)

~ Ricotta Cheese mixture (recipe below)

~ 24 to 36 oz. Mozzarella Cheese – shredded

Ricotta Cheese Mixture:

  • 32 oz. container of Whole Milk Ricotta Cheese
  • 1 large organic Egg
  • 1/4 c. grated Parmesan Cheese
  • 1 Tbsp. Dried Parsley
  • 1 Tbsp. Dried Oregano

Bake at 350 degrees Fahrenheit for 45 minutes. Let cool before slicing. Garnish with some fresh parsley and sere with a healthy salad and some garlic bread. Refrigerate leftovers and slice into chunks the next day and store in the freezer for dinners later the next week or so. BEST Lasagna ever !!!
